Our einkorn wheat was tested at 15.5% protein. 

Einkorn is known as an ancient grain. Some claim it's easier to digest than typical wheat. It has a nutty flavor that can enhance any recipe! 

It does contain less gluten than typical wheat, so some trial & error might occur when working with fresh einkorn flour.
