How The Meat Buying Process Works

Buying Homestead Hills meat is simple.  Here is a full breakdown on what you need to know about the meat buying process. 

Getting Started

Whether you are buying quarters (quarters not applicable for pork), halves or wholes of pork or beef, a $100 deposit is required. This will put you on the waiting list and ensure that you will get your meat when it's ready.

Choosing Your Cuts of Meat

You get to pick and choose how you want your meat processed. This will be communicated through the butcher.  Below are some of the example cuts that you can get. 

Beef example cuts:

  • Chuck Roast
  • Tip Roast
  • Brisket
  • Rump Roast
  • Shank, Short Ribs
  • T-Bone, Rib Eye
  • Sirloin
  • Ground Beef
  • Stew Meat

Pork example cuts:

  • Shoulder steaks
  • Baby back ribs/ ribs
  • Roasts
  • Chops
  • Sausage
  • Ham
  • Bacon
  • Plus soup bones, fat, and more.

* You are allowed one sausage per half hog (ground pork, brats, breakfast, etc).

How Much Will It Cost?

Cost is determined by price per pound of the animal at hanging weight (weight of carcass after initial butchering).

The price per pound can vary greatly! The butcher let's you pick your own cuts and offer curing and smoking. They offer the option of natural cure (celery juice powder) which costs more, but is an option many of our customers utilize! It will also depend on the size of the animal as there is a little variation in size. We recommend visiting the butchers website for pricing. Generally the price per pound is $3.25/lb and $2.95/lb for pork, again, at hanging weight.  This does not include the processing fee. 

There is also an additional processing fee per pound, typically around $1.49 for beef and between $2.00-$4.00 for pork depending on if you choose the natural cure (celery juice powder) or not.

How Much Meat Per Quarter?  

The hanging weight of a whole beef cow is around 700 pounds, a half beef cow is around 350 pounds and quarter of beef is around 175 pounds.  

The hanging weight of a whole hog is around 225 pounds and halves around 110-115 pounds. 

When Will I Get My Meat?

Typically our beef is processed in late summer or early fall.  Pork processing dates vary from year to year.  We will stay in touch with you about when pork is being processed.
